    • 🍗 250g chicken thigh
    • 1/2 bunch garlic chives
    • 1 pack shimeji mushrooms
    • đź§‚ Pinch of salt
    • 1 tbsp potato starch
    • 1 tsp vegetable oil
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 1.5 tbsp soy sauce
    • 1 tsp grated ginger
    • đź’§ 150ml water
  • Thickening

    • 2 tsp potato starch
    • đź’§ 2 tsp water

STEPS

Cut garlic chives into 1cm pieces and halve the shimeji mushrooms after removing the roots.

Cut chicken into bite-sized pieces, season with salt, and coat with potato starch.

Heat vegetable oil in a pan, cook chicken over medium heat until fully cooked, flipping occasionally, then remove.

Wipe excess oil from the pan, add garlic chives and mushrooms, and stir-fry over medium heat until softened.

Add seasoning ingredients, bring to a boil, and thicken with the potato starch mixture. Serve chicken topped with the sauce.
