Cut chicken into bite-sized pieces. Slice the onion thinly. Remove the stem from the tomato and cut into bite-sized pieces.

Heat olive oil in a pan over medium heat. Place chicken skin-side down and cook until browned. Flip the chicken, cover, and cook on low heat for about 7 minutes until fully cooked.

Add the onion and stir-fry until softened. Add tomato, sake, sugar, and miso. Cover and simmer on low heat for about 10 minutes.

Season with salt and pepper to taste. Garnish with chopped green onion before serving.
