    • 🥒 1 cucumber

    • 1/2 tbsp sake
  • Scallion Salt Sauce

    • đź§‚ 1/3 tsp salt
    • A pinch of pepper
    • 🍋 1 tbsp lemon juice
    • 2 tbsp sesame oil

Remove the tendon from the chicken tenders and make small cuts. Place them in a microwave-safe dish, sprinkle with salt and sake, cover loosely with plastic wrap, and microwave at 600W for 3 minutes. Once cooled, shred into bite-sized pieces.

Smash the cucumber with a rolling pin and cut into bite-sized pieces. Mince the scallion finely.

Mix all the sauce ingredients together. Arrange the chicken and cucumber on a plate, pour the scallion salt sauce over, and serve.
