INGREDIENTS
Main
- 🍗 1 piece (250g) chicken thigh
- 4 shiso leaves, thinly sliced
- 2 umeboshi, mashed into paste
- 🧂 Pinch of salt and pepper
- 1 tbsp salad oil
Seasoning
- 1 tbsp sake
- 2 tbsp mirin
- 1/2 tbsp soy sauce
STEPS
Thinly slice the shiso leaves and mash the umeboshi into a paste using a knife.
Cut the chicken thigh into two pieces and season both sides with salt and pepper.
Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and press occasionally while cooking. Once the skin is golden brown, flip the chicken, cover, and cook on low heat for 5–6 minutes.
Remove the chicken and wipe excess oil with a paper towel. Add sake, mirin, soy sauce, and mashed umeboshi to the pan. Cook over medium heat until the sauce thickens.
Plate the chicken, pour the sauce over, and garnish with sliced shiso leaves.
