    • 60cc ponzu soy sauce

Cut the chicken into large bite-sized pieces.

Prepare the vegetables: cut daikon into bite-sized pieces, carrot into irregular chunks, burdock into diagonal slices, ginger minced, and green onion into thin strips.

Heat salad oil and ginger in a pressure cooker over low heat until fragrant. Add chicken, skin-side down, and cook until browned on all sides.

Add daikon, carrot, and burdock root, stir to coat with oil. Add seasonings and mix well. Cover and heat on high until pressure builds, then cook on low for 10 minutes.

Let the pressure release naturally, then serve on a plate and garnish with green onion strips.
