INGREDIENTS
Protein
- 🍗 100g chicken thigh
Vegetables
- 🎃 120g pumpkin, cut into bite-sized pieces
- 🧅 1/3 stalk green onion, thinly sliced
Seasoning
- 1/2 tsp Japanese dashi powder
- 1 1/2 tbsp miso
Liquid
- 💧 200cc water
- 🥛 200cc soy milk
STEPS
Cut the pumpkin into bite-sized pieces and slice the green onion thinly.
Cut the chicken thigh into bite-sized pieces.
Heat a pot with water and dashi powder until boiling, then add the chicken and simmer on low heat for 2 minutes until cooked through.
Add the pumpkin and cook for 3–4 minutes until tender, then dissolve the miso into the soup.
Add the green onion and soy milk, and warm through without boiling.
