Cut the potato into bite-sized pieces, soak in water, and drain. Microwave for 2 minutes at 600W.

Slice the eggplant diagonally, soak in water, and pat dry. Thinly slice the onion.

Cut the chicken into small bite-sized pieces and season with salt and pepper.

Heat olive oil in a pan over medium heat. Cook chicken until browned, then add onion, eggplant, and potato. Stir until coated with oil, then add canned tomatoes, salt, and pepper. Cover and simmer for 4-5 minutes.

Layer 1/3 of the rice, cooked mixture, and cheese in a heatproof dish. Repeat to make 3 portions. Bake in a toaster oven for 8-10 minutes until golden brown. Garnish with parsley.
