INGREDIENTS
Main
- 🍗 1 chicken thigh (250g)
- 1 burdock root (60g)
- 50g mizuna greens
- 1.5 tbsp potato starch
- As needed salad oil
Seasoning
- 1/2 tsp grated ginger
- 1/2 tbsp sake
- 1/2 tbsp soy sauce
Dashi Broth
- 4g bonito flakes
- 1/2 tbsp sake
- đź§‚ 1/2 tsp salt
- đź’§ 300ml water
STEPS
Cut the chicken thigh into bite-sized pieces and marinate with ginger, sake, and soy sauce for 10 minutes.
Peel and slice the burdock root thinly, then soak in water to remove bitterness.
Heat salad oil in a pan and coat the chicken and burdock slices with potato starch before frying until crispy.
Prepare the dashi broth by boiling water, bonito flakes, sake, and salt. Strain the broth after boiling.
Place the fried chicken and burdock in the warm dashi broth and garnish with mizuna greens.
