- 🍚 2 bowls of warm rice (300g)
- 🍗 100g ground chicken
- 🌱 50g canned mixed beans
- 🧅 1/2 onion, chopped
- 🍅 200g canned diced tomatoes
- 🧄 1 clove garlic, minced
- 2 tsp olive oil
- 💧 100ml water
- 🌿 Chopped parsley, as needed
Seasoning
- 🍬 1/2 tsp sugar
- 🧂 1/3 tsp salt
- Pinch of pepper
- 🍅 1 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp consomme
- 2 1/2 tsp curry powder
- 🌿 1 tsp dried basil
STEPS
Chop the onion and garlic finely.
Heat olive oil and garlic in a pan over low heat until fragrant. Add ground chicken and stir-fry over medium heat until crumbled. Add onion and mixed beans, and cook until the onion softens.
Add the seasoning ingredients, water, and canned tomatoes. Mix well, bring to a boil, then cover and simmer on low heat for about 8 minutes.
Serve the curry over warm rice and garnish with parsley.
