Preheat the oven to 350°F (175°C). Generously butter two loaf pans.

Mix kosher salt into grated zucchini and let sit for 10 minutes. Transfer to a strainer and rinse under cold water to remove the salt. Let drain for 15 to 20 minutes.

Whisk together flour, baking powder, baking soda, cinnamon, ginger, cayenne, and nutmeg in a mixing bowl. Set aside.

Combine eggs, sugar, and vanilla in a large mixing bowl. Whisk until smooth and pale yellow, about 1 minute. Squeeze excess water out of the zucchini and add it to the egg mixture.

Pour in the melted butter and stir to combine. Add walnuts and the dry ingredients. Mix with a spatula until flour is fully incorporated.

Divide batter between the prepared loaf pans and tap to settle the batter.

Bake in the center of the oven until golden brown on top and a skewer inserted in the center comes out clean, about 50 minutes.

Let cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely before serving.
