    • 🥔 3 medium new potatoes (450g)
    • 🥓 50g block bacon
    • 🥒 1/2 cucumber
  • Cooking Oil

    • 1 tsp salad oil
  • Seasonings

    • đź§€ 50g cream cheese
    • 🥫 2 tbsp mayonnaise
    • 🥛 1 tbsp milk
    • đź§‚ 1/4 tsp salt
    • A pinch of black pepper

Cut the block bacon into 7mm wide strips.

Heat salad oil in a frying pan and fry the bacon over medium-low heat until browned. Remove and let cool.

Slice the cucumber thinly, rub with 1/3 tsp salt, let sit for 5 minutes, rinse, and drain well.

Wrap the new potatoes in damp kitchen paper and microwave at 600W for 5-6 minutes. Mash coarsely while still hot.

Mix the mashed potatoes with cream cheese, mayonnaise, milk, salt, and black pepper. Add the bacon and cucumber, and combine well.
