INGREDIENTS
Vegetables
- 🥕 1 carrot (150g), julienned
- 100g frozen edamame, shelled
- đź§‚ 1/4 tsp salt
Dressing
- đź§€ 30g cream cheese
- 1 tbsp mayonnaise
- 🍋 1/2 tbsp lemon juice
- Pinch of pepper
STEPS
Defrost the edamame and remove the beans from the pods.
Cut the carrot into thirds lengthwise and julienne. Place the carrot in a bowl, sprinkle with salt, and massage gently. Let sit for 5 minutes, then squeeze out excess water.
In a separate bowl, mix the cream cheese until smooth. Add the remaining dressing ingredients and mix well. Combine the carrot and edamame with the dressing and toss to coat evenly.
