Beat eggs with an electric mixer until frothy. Slowly add sugar while beating, followed by oil and vanilla. Stir in grated zucchini.

Mix flour, cinnamon, baking soda, salt, and baking powder in a bowl. Add the mixture to the zucchini batter and stir until combined. Fold in walnuts if desired.

Divide the batter between the loaf pans. Bake in the preheated oven for about 1 hour, or until a toothpick inserted in the center comes out clean.

Cool the loaves in the pans for 10 minutes, loosen edges with a knife, remove, and cool completely on a wire rack.
