Cut broccoli into small florets. Microwave with 1 tbsp water for 2 minutes at 600W, then drain. Chop the onion into coarse pieces.

Heat olive oil in a pot, add rice and onion, and sauté over medium heat until rice becomes translucent.

Add water, consomme powder, salt, and pepper. Simmer over low heat, stirring occasionally, until rice is tender.

Add broccoli, canned corn, and pizza cheese. Mix gently until combined.
