INGREDIENTS
Vegetables
- 🥦 1/2 head broccoli
- 1 pack shimeji mushrooms
- 🍅 4 cherry tomatoes, halved
Protein
- 🐟 1 can (70g) tuna in water
Dairy
- 🧈 10g salted butter
- 🧀 1 tbsp grated cheese
Egg Mixture
- 🥚 3 eggs
- 🧂 1/3 tsp salt
- Pinch of pepper
STEPS
Separate broccoli into small florets. Trim the base of shimeji mushrooms and break them apart by hand. Halve the cherry tomatoes.
Place broccoli and shimeji mushrooms in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 3 minutes.
In a bowl, mix eggs, salt, and pepper.
Grease a heatproof container with salted butter. Add broccoli, shimeji mushrooms, cherry tomatoes, and canned tuna. Pour the egg mixture over and sprinkle grated cheese on top.
Bake in a toaster oven for about 15 minutes.
