Cut broccoli into small florets and peel the stem. Place broccoli and 1 tbsp water in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 3 minutes. Slice onion into wedges and mince ginger.

Place peeled shrimp in a bowl, add salt and cornstarch, and rub gently. Rinse with water and pat dry.

Heat sesame oil and ginger in a frying pan over low heat until fragrant. Add shrimp and onion, stir-fry over medium heat until shrimp is cooked. Add broccoli and stir briefly, then add sake, chicken stock powder, and oyster sauce. Adjust seasoning with salt and pepper.
