INGREDIENTS

  • Wet Ingredients

    • 🥛 1/2 cup milk
    • 💧 1/2 cup water
    • 🍯 1 tablespoon honey
    • 🥚 2 large eggs, beaten
    • 🧈 1/2 cup unsalted butter
    • 2 teaspoons vanilla extract
  • Dry Ingredients

    • 2 1/4 teaspoons dry yeast
    • 1/3 cup white sugar
    • 🍊 1 tablespoon orange zest
    • 🧂 1 1/2 teaspoons kosher salt
    • 4 1/2 cups all-purpose flour, as needed

STEPS

1

Combine milk, water, and honey in the bowl of a stand mixer. Whisk in yeast, and let sit for 20 minutes.

2

Add orange zest, vanilla, sugar, eggs, melted butter, salt, and flour. Knead using a dough hook on low speed until combined, scraping sides as necessary.

3

Increase speed one setting and knead until smooth and elastic (8-10 minutes). If dough is too wet, add a little flour.

4

Shape dough into a ball. Transfer into a buttered bowl, cover, and let rise until doubled (about 2 hours).

5

Transfer dough to a floured surface, press out air, and shape into a log. Cut into 8 equal portions using a digital scale for precision.

6

From each portion, cut off 15-20% of the dough for the 'tuppo' topping. Roll both portions into smooth balls.

7

Line a baking sheet with a silpat sheet. Assemble each brioche by attaching the small dough ball ('tuppo') to the larger one.

8

Place baking sheet into a turned-off oven to proof until doubled, about 1 hour.

9

Preheat oven to 350°F (180°C). Brush buns with egg wash.

10

Bake until golden brown (20-25 minutes). Cool on the tray for 5 minutes, then transfer to a rack to cool completely.
