    • Mirin 2 tablespoons
    • Cooking sake 2 tablespoons

Cut the chicken thighs into bite-sized pieces and peel the daikon radish, slicing it into half-moons.

Add water to a pot, then add the chicken and daikon. Heat over medium heat.

Remove any scum, then add soy sauce, sugar, mirin, and cooking sake. Simmer further.

Lower the heat, cover with a drop-lid, and simmer for 15 minutes while occasionally stirring.

When the daikon is tender, turn off the heat. Let it cool slightly to allow the flavors to soak in.
