    • 🍍 1 (8 ounce) can crushed pineapple, drained with juice reserved

    • 1 (15.25 ounce) package yellow cake mix

Preheat the oven to 350 degrees F (175 degrees C).

Coat bottoms and sides of two 9-inch round cake pans with 2 tablespoons of melted butter. Sprinkle the bottom of each pan with 1/4 cup of brown sugar.

Sprinkle coconut over the brown sugar in one pan. Lay pineapple rings in a single layer on top of the coconut. Place a cherry in the center of each ring. Spread the drained crushed pineapple in the other pan.

Prepare the cake mix as directed on the package, substituting reserved pineapple juice for water. Divide the batter between prepared pans.

Bake cakes in the oven until a toothpick inserted comes out clean, about 40 to 50 minutes.

Cool cakes in the pans for 20 minutes. Invert the layer with crushed pineapple onto the serving dish. Carefully invert the layer with pineapples rings on top.
