STEPS
Heat vegetable oil in a frying pan, stir-fry the eggplants thoroughly, and set them aside.
In the same frying pan, stir-fry the bell peppers, then re-add the eggplants.
Mix the miso, mirin, and sugar together, then add them to the frying pan and coat everything evenly.
