INGREDIENTS
Main Ingredients
- 250g beef motsu
- 🥬 250g cabbage
- 🧅 100g onion
- 50g chives
- 🧄 2 cloves garlic
- 1/2 tsp chili flakes
- 1 tsp white sesame seeds
Seasonings
- 1 tbsp mirin
- 🧂 1/3 tsp salt
- 2 tbsp soy sauce
- 1 tsp Japanese dashi powder
- 💧 400ml water
STEPS
Boil beef motsu in a pot with water over high heat. Once boiling, reduce to medium heat and skim off scum for 20 minutes. Rinse and drain the beef motsu.
Prepare vegetables: cut cabbage into bite-sized pieces, slice onion into wedges, trim chives and cut into 5cm lengths, and thinly slice garlic.
In a pot, combine seasonings (☆), garlic, and onion. Heat over medium until boiling, then add cabbage and beef motsu. Skim off scum and simmer for 3 minutes. Cover and cook on low heat for 5 minutes.
Add chives, sprinkle chili flakes and sesame seeds, and cook until chives are tender.
