    • 🥒 1 medium cucumber

    • 2 tsp cornstarch

    • 1/2 tsp grated ginger

  • Sauce

    • 1 tsp Japanese dashi powder
    • 🍬 1 tbsp sugar
    • 1 tbsp vinegar
    • 1 tbsp miso
    • 🌰 1 tbsp ground sesame seeds

Cut the eggplant into thin diagonal slices after removing the stem.

Cut the cucumber into quarters lengthwise, then into thirds crosswise.

Rub the cucumber with salt in a bowl, let it sit for 10 minutes, then drain excess water.

Mix the sauce ingredients (dashi powder, sugar, vinegar, miso, sesame seeds) in a bowl.

Mix the beef with sake in a separate bowl, then coat with cornstarch.

Heat vegetable oil in a frying pan, add beef, garlic, and ginger, and stir-fry until the beef changes color. Add eggplant and cook until softened.

Add cucumber and the prepared sauce to the pan, stir-fry until the cucumber turns vibrant green. Adjust seasoning with pepper.
