INGREDIENTS
Rice
- 🍚 400g cooked rice
Fish
- 🐟 1/2 fillet pickled mackerel
Seaweed
- 5g shredded kombu
Pickles
- to taste pickled ginger
Sushi Vinegar
- 🍬 1 tbsp sugar
- 🧂 2/3 tsp salt
- 2 tbsp vinegar
STEPS
Mix sugar, salt, and vinegar in a bowl until the sugar dissolves to make sushi vinegar.
Add the sushi vinegar to the cooked rice and mix gently using a cutting motion to prepare sushi rice.
Line a rectangular container with plastic wrap, place the mackerel skin-side down, spread shredded kombu evenly, and layer sushi rice on top. Wrap tightly and press to shape. Let it sit for 30 minutes.
Unwrap, slice into bite-sized pieces, and serve with pickled ginger.
