INGREDIENTS
Dry Ingredients
- 300g all-purpose flour
- 8g baking powder
- 4g baking soda
- 4g cinnamon powder

Wet Ingredients
- 🥚 4 eggs
- 140g grape seed oil
- 160g brown sugar
- 2 tsp vanilla extract
- 🍌 240g mashed banana
Nuts
- 🌰 35g chopped walnuts
- 🌰 35g chopped pecans
- 🌰 35g chopped almonds
STEPS
In a bowl, whisk eggs, grape seed oil, brown sugar, and vanilla extract until combined. Do not overmix.
Mash the bananas with a fork and add them to the mixture. Sift in the dry ingredients and gently fold using a spatula.
Add chopped nuts to the batter and mix lightly. Reserve some nuts for topping if desired.
Pour the batter into a parchment-lined loaf pan. Tap the pan on the counter to level the batter. Add reserved nuts on top.
Bake in a preheated oven at 175°C (347°F) for 35 minutes. Check doneness with a skewer; it should come out clean.
