INGREDIENTS
Pasta
- 🍝 100g spaghetti
- 🐚 100g clams (pre-soaked)
- 1/2 tbsp olive oil
- 3 tbsp sake
- 3 tbsp pasta cooking water
Basil Sauce
- 🌿 10g fresh basil (about 20 leaves)
- 🧄 1/2 clove garlic
- 🌰 1 tbsp pine nuts
- 🧀 2 tbsp grated cheese
- 2 tbsp olive oil
- 🧂 1/4 tsp salt
STEPS
Thinly slice the garlic.
Rub the clams together in water to remove dirt.
Blend basil, garlic, and pine nuts in a food processor. Add grated cheese, olive oil, and salt, then blend until smooth to make basil sauce.
Heat olive oil in a pan over medium heat. Add clams and sake, cover, and cook for about 3 minutes until clams open. Turn off the heat.
Boil water in a pot, add salt (not listed in ingredients), and cook spaghetti 1 minute less than the package instructions. Reserve 3 tbsp of pasta water and drain the rest.
Reheat the pan with clams over medium heat. Add basil sauce and reserved pasta water, mix well, then add spaghetti. Stir until the sauce thickens and coats the pasta.
