- 🥔 200g new potatoes (small, about 7 pieces)
Seafood
- 🐟 2–3 anchovy fillets, minced
Dairy
- 🧈 15g salted butter
Herbs
- 🌿 Chopped parsley, as needed
STEPS
Mince the anchovy fillets. Wash the new potatoes thoroughly and place them in a microwave-safe container with their skins on. Cover loosely with plastic wrap and microwave at 600W for 4 minutes.
Make a cross-shaped cut on the top of each potato using scissors. Place the minced anchovies and butter on top of the potatoes. Bake in a toaster oven for 5 minutes or until golden brown.
Sprinkle with chopped parsley as desired and serve.
