INGREDIENTS

  • Noodles

    • 150g somen noodles
  • Fish

    • 180g aji (horse mackerel), filleted
  • Vegetables

    • 🥕 50g carrot, julienned
    • 🥒 100g cucumber, julienned
    • đź§… 1/3 stalk green onion, sliced
  • Oil

    • 3 tbsp salad oil
  • Starch

    • 2 tbsp potato starch
  • Sauce

    • 1.5 tbsp vinegar
    • 3 tbsp concentrated men tsuyu
    • 🍬 2 tsp sugar
    • 1 tsp chicken stock powder
    • Pinch of sliced chili
    • đź’§ 200ml water

Julienne the carrot and cucumber. Slice the green onion thinly.

Combine the sauce ingredients (vinegar, men tsuyu, sugar, chicken stock powder, chili, and water) in a bowl. Add the prepared vegetables.

Pat the aji fillets dry with paper towels and coat them with potato starch.

Heat salad oil in a pan over medium heat. Place the aji fillets skin-side down and fry for 3 minutes until golden. Flip and fry for another 2–3 minutes.

Add the fried aji fillets to the sauce mixture and let them marinate for 5 minutes.

Cook the somen noodles according to package instructions. Rinse under cold water and drain well. Serve the noodles in a bowl and top with the aji nanban and sauce.
