INGREDIENTS

  • Fish

    • 🐟 6 fillets of aji (210g)
  • Spices

    • 🧄 1 clove garlic
    • 🧂 1 tsp salt
    • 5–10 peppercorns
    • 2 dried chilies
    • 1 sprig rosemary
  • Oil

    • Enough olive oil to cover fish

Place the aji fillets on a tray and sprinkle evenly with half of the salt (1/2 tsp) on both sides. Cover with plastic wrap and refrigerate for 15 minutes. Remove from the fridge and pat dry with paper towels.

Slice the garlic thinly and remove the core. Cut off the stems of the chilies and remove the seeds.

Arrange the aji fillets skin-side up in a frying pan. Add enough olive oil to cover the fish, then add garlic, spices (peppercorns, chilies, rosemary), and the remaining salt. Heat on low for about 20 minutes. Turn off the heat and let cool to room temperature.
