Winter Melon with Chicken Soboro Sauce

    • 🍗 150g minced chicken
    • 400g winter melon
    • 1 piece ginger
    • 1 tbsp soy sauce
  • Broth

    • đź’§ 250cc water
    • 1 tbsp mirin
    • 1/3 tsp dashi powder
  • Thickener

    • đź’§ 2 tbsp water
    • 1/2 tbsp potato starch

Cut the winter melon into quarters, remove seeds and pulp, then peel and cut into bite-sized pieces. Slice the ginger thinly.

In a pot, add winter melon, ginger, and the broth ingredients (water, mirin, dashi powder). Bring to a boil, cover, and simmer on low heat for 10 minutes.

Add minced chicken and stir. Once boiling, skim off any foam. Add soy sauce, mix, cover, and simmer on low heat for 6–7 minutes.

Add the potato starch mixture (water and starch) and stir over medium heat until the sauce thickens.
