Wakame and Squid Korean Pancake (Chijimi)

INGREDIENTS

  • Vegetables

    • 3 stalks wakame
    • 1/4 stalk chopped wakame
  • Seafood

    • 1 squid, cleaned and chopped
  • Oil

    • 1 tbsp sesame oil
  • Sauce

    • đź§‚ 1 tbsp sugar
    • 1 tbsp vinegar
    • 1 tbsp soy sauce
    • 1 tsp white sesame seeds
  • Batter

    • 🥚 1 egg
    • 50g flour
    • 2 tbsp potato starch
    • 60ml water
    • 1/2 tsp chicken stock powder

Clean the squid by removing the innards, cartilage, and beak. Wash thoroughly, cut the body into 1cm squares, and chop the tentacles into bite-sized pieces.

Slice the wakame into 5mm pieces.

Mix the sauce ingredients (sugar, vinegar, soy sauce, sesame seeds) in a bowl.

In a separate bowl, combine the batter ingredients (egg, flour, potato starch, water, chicken stock powder), chopped wakame, and squid. Mix gently.

Heat sesame oil in a frying pan over medium heat. Pour the batter into the pan and cook for about 8 minutes, flipping halfway, until both sides are golden brown.

Serve the pancake with the prepared sauce and garnish with chopped wakame.
