Sweet and Spicy Stir-fried Eggplant and Pacific Saury

INGREDIENTS

  • Fish

    • 1 can (100g) pacific saury in kabayaki sauce
  • Vegetables

    • 🍆 1 medium eggplant (80g)
  • Condiments

    • 1 tbsp mayonnaise
  • Seasoning

    • Potato starch as needed
    • A pinch of sansho pepper

STEPS

Remove the stem from the eggplant and slice it into 1cm thick pieces. Coat both sides with potato starch.

Heat mayonnaise in a frying pan over medium heat. Add the eggplant slices and cook for 3–4 minutes, flipping occasionally, until both sides are golden brown. Add the pacific saury and mix well.

Transfer to a serving plate and sprinkle with sansho pepper.
