INGREDIENTS

- 200g boiled pork offal
- đź§… 1/4 onion, thinly sliced
- 3 tbsp ponzu soy sauce
- 1 piece ginger, sliced and julienned
- 1 tbsp sake
Toppings
- Chopped green onion, as needed
- White sesame seeds, as needed
- A pinch of shichimi togarashi
STEPS
Thinly slice the onion and soak in water briefly, then drain. Slice the ginger thinly and julienne the rest.
Wash the boiled pork offal briefly in water and drain. Boil it with sliced ginger, half the sake, and enough water to cover. Skim off the foam and boil for 3 minutes. Repeat the process once more and drain thoroughly.
Arrange the onion and pork offal on a plate. Top with green onion, julienned ginger, and drizzle ponzu soy sauce. Sprinkle sesame seeds and shichimi togarashi.
