Cut the eggplants into bite-sized pieces using a rolling cut method, soak in water, and drain. Trim the ends of the green beans and cut them into thirds. Slice the garlic thinly and remove the core.

Heat salad oil and garlic in a frying pan over low heat until fragrant. Add the pork and stir-fry over medium heat until the pork changes color.

Add the eggplants and green beans, stir-fry until coated with oil, then cover and steam over low heat for about 2 minutes. Add the seasonings and stir-fry until glossy.
