- 🍆 1 eggplant
Cooking Oil
- 1 tbsp salad oil
Seasonings
- 1 tbsp sake
- 🍬 1/2 tsp sugar
- 1 tbsp soy sauce
- 1/2 tsp grated ginger

STEPS
Cut the eggplant into quarters lengthwise, then slice into thirds crosswise.
Heat salad oil in a frying pan over medium heat and stir-fry the eggplant until tender.
Add bean sprouts to the pan and stir-fry briefly, then add the seasonings (sake, sugar, soy sauce, and ginger) and mix well.
Serve on a plate and garnish with chopped green onion.
