Cut the spring greens into 4cm pieces. Thinly slice the onion.

Cut the bacon into 2cm wide pieces.

Heat olive oil in a pot over medium heat. Add the bacon and onion, and sauté until the onion is translucent and the bacon is coated in oil.

Add consomme and water to the pot, and bring to a boil. Add the spring greens and simmer until they are wilted. Season with salt and pepper to taste.
