Simmered Pacific Saury in Sweet Soy Sauce

INGREDIENTS

  • Fish

    • 🐟 2 whole Pacific saury (300g)
  • Seasoning

    • 3 tbsp sake
    • 3 tbsp mirin
    • 🧂 1 tbsp sugar
    • 2 tbsp soy sauce
    • 💧 100 ml water
    • 2 slices ginger
    • 1 whole red chili

Cut off the heads and tails of the Pacific saury, then divide each fish into three equal parts. Clean the insides with water and remove blood clots using chopsticks. Pat dry with kitchen paper.

Remove the stem and seeds from the red chili.

Combine all seasoning ingredients in a pot and bring to a boil. Add the Pacific saury, cover with a drop lid and regular lid, and simmer on low heat for 30–40 minutes.

Remove the lids and simmer until the liquid is almost completely reduced.
