    • 🐚 200g clams (purged)
    • 🥔 240g daikon radish (8cm)
  • Daikon Pre-boil

    • 🍚 1 tbsp rice
  • Seasonings

    • 🍶 1 tbsp sake
    • 🍶 1 tbsp mirin
    • 🧂 1/2 tbsp light soy sauce
    • 1/3 tsp Japanese dashi powder
    • 💧 150ml water

Cut the daikon radish into 2cm thick slices, peel the skin, and trim the edges. Make shallow cross cuts on one side.

In a pot, add daikon, rice, and enough water to cover. Bring to a boil and simmer over medium heat for 15 minutes until a skewer passes through easily. Rinse and drain.

Place daikon, seasonings (☆), and water in a pot. Cover and simmer over low heat for 10 minutes. Add clams, cover, and cook over medium heat for 3–5 minutes until the clam shells open.
