    • 1.5 tbsp soy sauce

Cut the chicken thigh into bite-sized pieces.

Heat salad oil in a frying pan over medium heat, place the chicken skin-side down, and cook until golden brown. Flip the chicken, add the onion, and cook for 1–2 minutes until slightly browned.

Add the sauce ingredients (sake, mirin, sugar, vinegar, soy sauce, and water) to the pan, bring to a boil, cover, and simmer on low heat for 10–12 minutes.
