  • Seasoning

    • 1 tbsp mirin
    • 2 tbsp concentrated soy sauce
    • 150ml water
  • Thickener

    • 2 tsp potato starch
    • 1 tbsp water

Cut the pea shoots in half, trim the roots, and cut the chicken into bite-sized pieces. Grate the turnip.

In a pot, combine the seasoning ingredients (mirin, soy sauce, and water) and bring to a boil. Add the chicken and simmer over medium heat for 2 minutes.

Add the pea shoots and cook until softened, then add the grated turnip and simmer briefly.

Mix the potato starch with water to create a slurry, then add it to the pot and cook until the sauce thickens.
