INGREDIENTS
Rice
- 🍚 2 cups soaked rice
Seafood
- 🦪 200g shijimi clams
Vegetables
- 🍄 1 pack shimeji mushrooms
- 🥕 1/2 carrot, julienned
Liquids
- 50cc sake
- đź’§ 50cc water
Seasonings
- 2 tbsp mirin
- đź§‚ 1/4 tsp salt
- đź§‚ 1 tbsp soy sauce
- 1/2 tsp dashi powder
- đź’§ water as needed
STEPS
Julienne the carrot and trim the root of the shimeji mushrooms, then separate them.
In a pot, combine shijimi clams, sake, and water. Heat until boiling, then cover and cook over medium heat until the clam shells open.
Remove the clam shells and extract the meat.
In a rice cooker, add the soaked rice, clam broth, and seasonings (adjust water to the 2-cup mark). Mix well and flatten the rice. Layer the clams, carrot, and shimeji mushrooms on top and cook as usual.
