Slice the shiitake mushrooms and trim the pea sprouts into thirds.

Heat the white dashi, soy sauce, salt, and water in a pot over medium heat. Once boiling, add the shiitake mushrooms and pea sprouts, cooking for about 1 minute.

Add the potato starch mixture to the pot and stir until thickened. Pour in the beaten egg, let it float, then gently stir and turn off the heat.
