INGREDIENTS
Fish
- 🐟 1 can (190g) mackerel in water
Egg
- 🥚 1 beaten egg
Vegetables
- 🥔 150g daikon, sliced
- 2 bell peppers, chopped
- 1 piece ginger, minced
Condiments
- 🧂 1/2 tbsp soy sauce
- 1/2 tsp chicken stock powder
Oil
- 1/2 tbsp salad oil
STEPS
Peel the daikon thickly, cut into quarters lengthwise, then slice into 2–3mm thick pieces. Halve the bell peppers, remove stems, seeds, and pith, then chop into bite-sized pieces. Mince the ginger.
Heat salad oil and minced ginger in a frying pan over low heat until fragrant. Add daikon and stir-fry over medium heat until softened. Add bell peppers and stir briefly.
Add the mackerel can, roughly break it apart, and stir briefly. Add soy sauce and chicken stock powder, mixing well. Pour in the beaten egg and stir gently until semi-cooked.
