Satoimo and Pork Miso Soup

INGREDIENTS

  • Meat

    • 🐖 50g sliced pork
  • Vegetables

    • 2 satoimo (100g), peeled and cut
    • 🧅 Chopped green onion, as needed
  • Condiments

    • 1/2 tsp salad oil
    • 2 tbsp miso
  • Seasoning

    • 1/2 tsp Japanese dashi powder
  • Liquid

    • 💧 400cc water

Peel and cut satoimo into large bite-sized pieces. Rub them together in a bowl of water to clean the surface, then drain.

Heat salad oil in a pot over medium heat. Add pork and stir-fry until the color changes. Add satoimo and stir-fry until coated with oil.

Add water and bring to a boil. Skim off any foam, then add dashi powder. Cover and simmer over low heat for 5–6 minutes until satoimo is tender.

Turn off the heat and dissolve miso into the soup. Serve in bowls and garnish with chopped green onion.
