Peel and cut satoimo into bite-sized pieces. Rub with salt to remove stickiness, rinse with water, and drain. Microwave in a heatproof container for 3 minutes at 600W.

Cut chicken thigh into bite-sized pieces.

Once satoimo has cooled slightly, coat it evenly with potato starch.

Heat olive oil and garlic in a frying pan until fragrant. Add chicken and stir-fry over medium heat.

When the chicken changes color, add satoimo and fry until the surface becomes crispy.

Remove garlic, add soy sauce and mirin, and stir-fry until glossy. Garnish with chopped green onion.
