INGREDIENTS
Noodles
- 2 packs frozen udon noodles
Fish
- 1 can (190g) saba canned mackerel
Vegetables
- 160g cabbage
- 1/2 carrot (75g), sliced
Oil
- 1/2 tbsp salad oil
Seasonings
- 1 tbsp sake
- 1/4 tsp Japanese dashi powder
- 1 tbsp soy sauce
- 1/2 tsp grated ginger
STEPS
Cut the cabbage into 1cm wide strips for the core and 2cm wide strips for the leaves. Slice the carrot into thin half-moon shapes.
Boil frozen udon noodles according to package instructions, then drain the water.
Heat salad oil in a frying pan over medium heat. Stir-fry the cabbage core and carrot for 2–3 minutes until softened. Add the cabbage leaves and stir-fry until coated with oil.
Add the canned saba, breaking it into chunks, and stir until well combined. Add the udon noodles and stir-fry briefly.
Add the seasonings (sake, dashi powder, soy sauce, and grated ginger) and stir-fry quickly to combine.
