INGREDIENTS
Rice
- 🍚 2 cups soaked rice
Fish
- 🐟 160g sardines (filleted)
Vegetables
- 1 piece ginger (julienned)
- 2 umeboshi (pitted and chopped)
- 🧅 Chopped green onion (to taste)
Seasoning
- 1 tbsp salad oil
- 💧 Water (as needed)
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1/3 tsp salt
- 1/2 tbsp soy sauce
- 1/2 tsp Japanese dashi powder
STEPS
Remove pits from umeboshi and chop them roughly. Julienne the ginger.
Heat salad oil in a pan and cook the sardines on medium heat until both sides are browned.
Add soaked rice, seasonings, and water to the rice cooker. Layer ginger, umeboshi, and sardines on top, then cook as usual.
Once cooked, mix the rice, breaking apart the sardines and umeboshi.
Serve in bowls and garnish with chopped green onions.
