Pumpkin and Bacon Consommé Soup

    • 🥓 2 slices bacon
    • 🎃 120g diced pumpkin
    • 🧅 50g diced onion
    • 🧈 5g salted butter
  • Seasonings

    • 1/2 tsp consommé
    • 🧂 1/3 tsp salt
    • A pinch of pepper
    • 💧 400ml water
  • Garnish

    • 🌿 A pinch of chopped parsley

Cut the pumpkin into 1.5cm cubes, removing any hard skin. Dice the onion into 1.5cm pieces.

Slice the bacon into 1cm wide strips.

Heat butter in a pot over medium heat. Add the bacon and sauté briefly, then add the onion and cook until translucent. Add the pumpkin and stir until coated with oil.

Add the consommé, salt, pepper, and water. Bring to a boil, then cover and simmer on low heat for 5 minutes until the pumpkin is tender.

Serve in bowls and garnish with chopped parsley.
