    • 1/2 tbsp grain mustard

Thinly slice the onion vertically.

Make small cuts in the pork loin between the lean and fat parts to prevent curling. Sprinkle with salt and pepper, then coat both sides with cornstarch.

Heat salad oil in a frying pan over medium heat. Add the pork and cook for about 2 minutes until browned. Flip and push to one side, then add the onion and stir-fry for 2–3 minutes until softened.

Add the seasoning mixture (sake, mirin, sugar, soy sauce, grated ginger, and mustard) and cook until the sauce thickens and coats the ingredients.
