Pork and Konjac Kimchi Pancake

  • Meat

    • 50g minced pork
  • Vegetables

    • 100g konjac, sliced
    • 70g kimchi
  • Oils

    • 1/2 tbsp salad oil
    • 1 tbsp sesame oil
  • Batter

    • 🥚 1 egg
    • 80cc water
    • 80g all-purpose flour
    • 1 tbsp potato starch
  • Sauce

    • 2 tbsp ponzu soy sauce
    • Chili oil, to taste
    • White sesame seeds, to taste

Slice konjac into 7mm strips. Boil in water for 2 minutes, drain, and let cool.

In a bowl, whisk egg and water. Add flour and potato starch, then mix. Add minced pork, konjac, and kimchi, and combine into batter.

Heat salad oil in a pan over medium heat. Pour in batter and cook until golden brown. Flip, drizzle sesame oil around the edges, and press down while cooking for 3 minutes until crispy.

Mix ponzu, chili oil, and sesame seeds in a bowl to make the dipping sauce.

Cut the pancake into bite-sized pieces, serve with dipping sauce.
