    • 🐟 2 fillets of cod
    • 2 green peppers, sliced
    • 🥕 60g carrot, julienned
    • 🧂 Pinch of salt and pepper
  • Sauce

    • 🥫 2 tbsp mayonnaise
    • 🍶 1 tbsp sake
    • 1.5 tbsp miso
    • 🍬 1 tsp sugar
    • 🧄 1/4 tsp grated garlic
    • 🌰 1 tbsp ground sesame seeds

Season the cod fillets with salt and pepper, then pat dry.

Slice the green peppers and julienne the carrot.

Mix all the sauce ingredients in a bowl to make the miso sauce.

Place one cod fillet on a sheet of aluminum foil. Add half the green peppers and carrots beside the cod. Spread half the miso sauce over the cod. Wrap the foil tightly. Repeat for the second fillet.

Bake the foil packets in a toaster oven for about 10 minutes until the cod is cooked through.

Open the foil packets and drizzle mayonnaise over the cod. Return to the toaster oven and bake for an additional 2 minutes until golden brown.
